- 1 litre of cold still mineral water

Directions:

1. Begin by covering the ground cocoa nibs with cold water. You can do this in a French press for convenience, or use a Kilner jar with a coffee filter paper secured on top.

2. Allow the mixture to steep overnight, allowing the flavours to meld.

3. After steeping, give the mixture a gentle press to separate the cocoa nibs from the liquid.

4. Transfer the liquid to a labelled sterilised bottle or jar for storage, and keep it refrigerated to enjoy whenever you please.

An alternative method involves covering the cocoa nibs with water and letting the mixture sit at room temperature for at least 16 hours. To do this, place a coffee filter paper over the opening of a Kilner jar, securing it with an elastic band. Slowly pour the mixture into the jar, allowing the filter to work its magic.
