Fairtrade pancakes

  • 100g plain flour
  • 250ml of full fat milk
  • 1 Free range egg.
  • Pinch of Salt
  • 50g oil/cocoa butter
  • Toppings of choice
  • Honey
  • Fairtrade castor sugar
  • lemon/orange juice
  • Rhubarb compote
  • grated Guittard 65% fair trade chocolate


Sift the flour and the salt into a large bowl. Make a well in the centre of the flour and break in the egg.

Whisk in the milk, drawing the flour from the sides of the bowl into the centre.

Leave to stand for at least 30 minutes. If the batter is too thick, add a little extra milk.

Get the pan nice & hot and when the oil begins to smoke slightly, spoon a ladle of the batter, then swirl the pan so the batter covers the whole base. Cook until golden brown on the bottom. Turn over (about 1 ½ minutes on each side)

Serve straight away with castor sugar, or Chocolate, lemon, orange or rhubarb compote and crème fresh poured on top.
