Gingerbread Waffles and thick Chocolate Sauce

Ingredients

  • 325g light molasses
  • 315g butter
  • 6g bicarbonate of soda
  • 120m milk
  • 1 egg
  • 260g Plain flour
  • 5g ground cinnamon
  • pinch ground sea salt
  • 500ml boiling water
  • 200g white sugar
  • 20g cornflour
  • 40g cocoa powder salt
  • 2 teaspoons vanilla extract
  • 30g butter

Method

Heat molasses and butter in a small saucepan until almost boiling.

turn off the  heat and let cool slightly.

Stir in bicarbonate of soda, milk and egg.

In a large bowl, sift together flour, ginger, cinnamon and salt. Make a well in the centre and pour in the molasses mixture. Mix until smooth.

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron.

Cook until golden brown. Serve hot with chocolate sauce.

To make chocolate sauce:

Put water, sugar, cornflour, cocoa powder and a pinch of salt, in a pan,

On a medium heat, stirring constantly, bring to the boil.

turn off the heat add vanilla and butter; stir until smooth.
