Ingredients

  • 140g Dark Chocolate (Fairtrade 70%)
  • 30g Caster Sugar (Fairtrade)
  • 2 Dashes of Peppermint Oil

Method

Step 1
Line a large tray with a sheet of thick acetate (polythene)
Step 2
Melt the chocolate in a bowl in the microwave in 30 second blast until melted then stir in the sugar.
Step 3
Add a drop or two of peppermint oil and stir gently but thoroughly into the chocolate.
Step 4
With a teaspoon, drop small amounts of the mint mixture on to the polythene.
With the back of the spoon, swirl the chocolate round to make a wafer-thin disc.
Step 5
Allow the chocolate to dry completely before lifting the mints from the polythene very gently, using the blade of a pallet knife.
