Rocky Road fruit and nuts recipe

Ingredients

  • 130g unsalted butter
  • 100g milk chocolate
  • 200g dark chocolate
  • 4 tbsp local honey
  • 120g digestive biscuits
  • 80g mini marshmallows
  • 80g dried fruit and nut mix
  • 50g white chocolate (optional)

Method

Instructions:

1. In a heatproof bowl, melt the honey, butter, milk, and dark chocolate in the microwave in short 30-second blasts, stirring in between, until fully melted and smooth.

2. Break up the biscuits and roughly chop the nuts. Add these to the bowl along with the dried fruit and marshmallows. Stir to combine.

3. Pour the mixture into a greased 8x8 inch baking dish and smooth with pallet knife.

4. If using, melt the white chocolate and drizzle it over the top of the rocky road.

5. Refrigerate for at least 1 hour, or until set.

6. Cut into bite-sized pieces and enjoy!

Tips:

* For a chewier rocky road, use hobnobs instead of digestive biscuits.

* You can use any type of dried fruit and nuts you like. Some popular choices include cranberries, raisins, almonds, and cashews.

* If you don't have white chocolate, you can use melted milk chocolate or dark chocolate instead.

* Rocky road can be stored in the fridge for up to 1 week.
