Ingredients

  • 180g chopped white chocolate
  • 60g softened butter
  • Zest of 1 lemon
  • 50ml double cream
  • 1/2 teaspoon lemon extract
  • 2-3 drops of yellow food colouring (optional)
  • 30g icing sugar

Method

1. Begin by placing the chopped white chocolate in a mixing bowl, ready to create the base of our creamy truffles.

2. In a small saucepan, melt the butter together with the zesty goodness of lemon zest. This will infuse the butter with a burst of citrus flavour.

3. Stir in the double cream, and gently heat the mixture until it is just about to reach the boiling point. You want the cream to the just scald point, releasing its full potential into our truffles.

4. Now, pour the scalded cream mixture through a fine sieve over the white chocolate.

This will ensure that our ganache is silky smooth, without any lumps or zest.

5. Add the tantalising lemon extract and a few drops of yellow food colouring to enhance the visual appeal of the truffles. Stir it all together until the mixture transforms into a luscious and velvety ganache.

6. Once the ganache is ready, cover the bowl and let it chill in the refrigerator for about 30 minutes. This will give it enough time to firm up, making it easier to shape the truffles later.

7. After the chilling time, it's time for the fun part! Scoop up teaspoonfuls of the ganache and lovingly mould them into delightful little truffle balls.

8. To add a touch of elegance and sweetness, roll the truffle balls in a generous coating of icing sugar. This will give them a lovely powdered appearance, making them even more irresistible.

9. Place the truffles back in the refrigerator for at least 30 minutes to let them set and develop their flavours.
