- 4 cleaned trimmed leeks, fine dice
- 1/2 large white onion, fine dice
- 2 medium potatoes, peeled and cut into cubes
- 1 litre chicken stock
- 250ml milk
- salt and fresh pepper
Place a medium soup on a medium heat and add chicken stock, leeks, onion, potatoes and bring to a boil.
Cover and simmer on low for about 20-25 minutes, until potatoes are soft.
Using an immersion/stick blender, blend the soup until smooth
Add the milk and adjust salt and pepper to taste.
Serve immediately with chopped chives and warm bread
